Egg Dishes and Breakfast Entrees
Ham & Broccoli Quiche
You can prepare this recipe the day before and refrigerate overnight. Bake on the morning you plan to serve.
Servings: Approx 15 Slices
½ cup (1/4 lb.) butter
½ cup all-purpose flour
1 tsp baking powder
¼ tsp salt
2 cups large-curd cottage cheese
2 cups shredded cheese (we use cheddar)
½ cup chopped onion
1 cup chopped broccoli
½ lb. chopped ham
½ cup fresh parsley, chopped (optional)
Melt 2 tbs butter and saute onions and broccoli. Whip eggs until fluffy and add flour, baking powder, salt, cottage cheese, remaining butter (melted), and half the shredded cheese. Mix well. Add onions, broccoli, ham and parsley. Combine.
Please mixture in greased 9″x13″ baking dish. Top with remaining shredded cheese. Bake at 350 degrees for approximately one hour, or until the top is lightly browned.
