Lunch and Dinner Entrees
Orange Avenue Chicken Salad
A favorite of our guests and the staff!
Ingredients
Servings: Fills 64 mini-croissants
4 C Cooked Chopped Chicken = two roasted chickens
1 C Mayonnaise
1 TSP Paprika
1 TSP “Seasoning Salt” *
Black Pepper to Taste
1 1/2 C Craisins
1 C Chopped Celery
1 C Crumbled Blue Cheese
1 C Halved Green Grapes
1 Green Onion, Chopped
1/2 C Minced Green Bell Pepper
1 C Chopped and Toasted Pecans
Seasoning Salt * (blend all together and store air tight)
6 T Salt
1/2 TSP Dried Thyme
1/2 TSP Marjoram
1/2 TSP Garlic Salt or Powder
2 1/4 TSP Paprika
1/4 TSP Curry
1 TSP Dried Mustard
1/4 TSP Onion Powder
1/8 TSP Dill Weed
1/2 TSP Celery Salt
Directions
Mix mayo, paprika, seasoning salt, and pepper.
Blend together Craisins, celery, bell pepper, onion, chicken and grapes.
Mix well and chill overnight.
Add nuts just before assembling sandwiches.
