Lemon, Tarragon and Shallot Roast Chicken

Ingredients

Servings: Serves 6 - 8 people

  • Whole chicken
  • Lemons
  • Zest from lemons
  • Tarragon
  • Shallots
  • Salt
  • Pepper
  • Butter (to rub on chicken)

Directions

  1. Preheat oven to 400 degrees.
  2. Rub the chicken with butter.
  3. Season the chicken liberally with salt and pepper.
  4. Scatter the tarragon and zest in and around the chicken.
  5. Half the lemons and squeeze the juice over the chicken.
  6. Chop the shallots and scatter them around.
  7. Bake for one hour.
  8. Let the chicken rest for 10 minutes before cutting.
