Amarena Black Cherry Fudge

Amarena Black Cherry Fudge

Rich with Callebaut chocolate and intense Amarena cherries, these are a perfect Valentine’s Day dessert.

Ingredients

Servings: 8

  • 7 ounces sweetened condensed milk (plus extra for drizzling)
  • 9 ounces semi-sweet chocolate chips (we prefer Callebaut Belgian chocolate)
  • 1/3 cup chopped, canned Amarena cherries (can be found in most Italian markets)
  • 1/4 teaspoon almond extract (optional)

Directions

1. Line a 6” round cake pan (or other similar small pan) with parchment paper;
2. In a small saucepan over medium-low heat, add the sweetened condensed milk. Heat while stirring occasionally until small bubbles form on the edge of the pan (do not boil);
3. Have the chocolate chips ready in a small bowl;
4. Pour the hot sweetened condensed milk on top of the chocolate chips, and let sit for 1 minute. Stir gently, and let rest for another 30 seconds or so;
5. Meanwhile, slice the cherries in half and place them in a small bowl. Toss them with the almond extract;
6. At this point, the fudge should be completely homogeneous and melted;
7. Pour half of the fudge into the parchment-lined pan. Press three-quarters of the cherries on top of the fudge. Drizzle about 2 tablespoons of sweetened condensed milk on top;
8. Finally, pour the remaining fudge mixture on top of the cherries in the pan, and smooth the top;
9. Decorate the top of fudge with the remaining cherries;
10. Let the fudge set at room temperature for at least an hour (or set in the fridge for 30 minutes);
11. Before serving, drizzle with an extra few tablespoons of sweetened condensed milk. Slice into 8 wedges, and serve.
