Double Chocolate Flourless Torte

1 lb semisweet chocolate

1/2 lb sweet butter

1 C sugar

1 C half & half

1 T vanilla

1/2 tsp salt

8 eggs



1 lb semisweet chocolate

1 1/2 C heavy cream


Preheat oven to 350. Grease a 9″ springform pan.

In a saucepan over low heat, combine the cake chocolate, butter, sugar, half & half, vanilla and salt. Stir until melted and remove from heat.

Whisk the eggs and stir into the chocolate mixture. Pour into prepared pan. Bake until a toothpick inserted in the middle comes out clean, about 30 minutes. Cool completely and chill.

For the ganache: Bring the cream just to a boil and pour over the chocolate. Stir until melted. Pour over the top of cooled cake. Chill completely before serving.
