Cream Scones with Berries


Servings: Makes 12 Scones

2 cups all-purpose flour
1 tablespoon sugar, plus extra for topping
1 tablespoon baking powder
1 stick butter, chilled and cut into small pieces
2 eggs
½ cup heavy cream
1½ teaspoons vanilla extract
1 cup fresh or frozen berries of choice
Egg wash (1 egg yolk beaten with 1 tablespoon of water or milk)


Preheat oven to 350°F. In a large bowl, combine flour, sugar and baking powder. Cut in butter until mixture resembles a coarse meal. In a medium bowl, combine eggs, cream and vanilla. Stir cream mixture into flour mixture until flour is incorporated, then mix for 1-2 minutes longer. Add berries and mix gently just until combined. With an ice cream scoop, scoop batter onto a parchment paper-lined baking sheet. Brush scones with a little egg wash and sprinkle with sugar. Bake 30-40 minutes, or until golden brown on top.
