Chocolate Dipped Macaroons




3 cups shredded coconut

1 cup of ground almonds or almond flour

⅓ cup tapioca flour

½ teaspoon salt



¼ cup brown rice syrup or agave

¼ cup maple syrup

¼ cup coconut oil

1 teaspoon vanilla

1 teaspoon almond extract (optional)


Chocolate Ingredients:

1 cup chocolate chips

¼ cup coconut oil


  1. In double broiler, add chocolate chips and coconut oil.
  2. When melted, dip cold macaroon in chocolate.
  3. Place back on silicone mat.


  1. Combine dry ingredients in large mixing bowl. Mix well.
  2. Combine wet ingredients in large mixing bowl. Mix well.
  3. Pour wet ingredients into dry ingredients bowl. Mix until thoroughly combined and so that if a small bit is pressed in hand it stays together*.
  4. Scoop out using purple ice cream scooper onto a silicone mat.
  5. Bake in 350°F oven for 10 minutes, until golden brown.
  6. Cool


*What to add if too dry:

-Brown rice syrup (increases stickiness)

-Maple syrup (increases stickiness)

-Coconut oil (not too much or they will flatten)
