Chocolate Dipped Macaroons
Ingredients
Servings:
Dry
3 cups shredded coconut
1 cup of ground almonds or almond flour
⅓ cup tapioca flour
½ teaspoon salt
Wet
¼ cup brown rice syrup or agave
¼ cup maple syrup
¼ cup coconut oil
1 teaspoon vanilla
1 teaspoon almond extract (optional)
Chocolate Ingredients:
1 cup chocolate chips
¼ cup coconut oil
Directions:
- In double broiler, add chocolate chips and coconut oil.
- When melted, dip cold macaroon in chocolate.
- Place back on silicone mat.
Directions
- Combine dry ingredients in large mixing bowl. Mix well.
- Combine wet ingredients in large mixing bowl. Mix well.
- Pour wet ingredients into dry ingredients bowl. Mix until thoroughly combined and so that if a small bit is pressed in hand it stays together*.
- Scoop out using purple ice cream scooper onto a silicone mat.
- Bake in 350°F oven for 10 minutes, until golden brown.
- Cool
*What to add if too dry:
-Brown rice syrup (increases stickiness)
-Maple syrup (increases stickiness)
-Coconut oil (not too much or they will flatten)
-Water
